Tomato-Pepper Salsa

Ingredients
- 8 c. chopped peeled tomatoes
- 4 c. chopped sweet peppers
- 2 c. chopped onions
- 1 c. cider vinegar
- 1 c. chopped red peppers
- 1 c. chopped jalepeno peppers, seeded
- 4 cloves garlic, minced
- 1 (5 ½ oz) can tomato paste
- 2 tbsp. sugar
- 1 tbsp. salt
- 2 tsp. paprika
- 1 tsp. oregano, dried
- ¼ c. chopped fresh coriander
Directions
Bring ingredients to a boil, stirring often (not including coriander).
Reduce heat to mid-low; simmer for about 1 hour.
Stir in coriander; simmer 5 minutes.
Fill and seal jars; process for 20 minutes.
