Tomato-Pepper Salsa

Serves 9 cups

Ingredients

  • 8 c. chopped peeled tomatoes
  • 4 c. chopped sweet peppers
  • 2 c. chopped onions
  • 1 c. cider vinegar
  • 1 c. chopped red peppers
  • 1 c. chopped jalepeno peppers, seeded
  • 4 cloves garlic, minced
  • 1 (5 ½ oz) can tomato paste
  • 2 tbsp. sugar
  • 1 tbsp. salt
  • 2 tsp. paprika
  • 1 tsp. oregano, dried
  • ¼ c. chopped fresh coriander

Directions

  1. Bring ingredients to a boil, stirring often (not including coriander).

    1. Reduce heat to mid-low; simmer for about 1 hour.

    2. Stir in coriander; simmer 5 minutes.

    3. Fill and seal jars; process for 20 minutes.
