Tomato and Avocado Salad

Ingredients

  • 1 1/2 lb ripe tomatoes, cut in chunks, or cherry tomatoes
  • 8 cups salad greens
  • 2 ripe avocados, cut in chunks
  • 3 tbsp chopped fresh cilantro
  • 1/4 cup lime juice
  • 1 clove garlic, minced
  • 1 tbsp honey
  • 1/2 tsp kosher salt
  • 1 tbsp cumin seeds, toasted and lightly crushed, or 1/2 tsp ground cumin
  • 1/3 cup sunflower oil or extra-virgin olive oil

Directions

  1. In a large bowl, combine tomatoes, greens, avocados and cilantro.

    1. To prepare dressing, in a small bowl combine lime juice, garlic, honey, salt and cumin. Whisk in oil. Taste and adjust seasonings if necessary.

    2. Toss salad with dressing to taste.
