Scallop & Fish Coquilles

Ingredients

  • 7 oz (198g.) frozen scallops
  • ½ lb (250g) fish fillets
  • 2 tbsp. butter
  • 2 tbsp. flour
  • ¾ c. milk
  • 1 c. shredded cheese
  • 2 tbsp. white wine
  • 2 tbsp. dry bread crumbs

Directions

  1. In shallow dish, arrange scallops in a single layer; cover with waxed paper.

    1. Microwave at Hi for 5 minutes, stirring once.

    2. Drain, reserving 1/3 c. cooking liquid.

    3. Pat fish fillets dry and cut into 1” pieces. Arrange in single layer in shallow dish; cover with waxed paper.

    4. Microwave on Hi for 2 minutes (til opaque).

    5. In 2 cup measure, microwave butter on Hi 40-50 seconds til melts.

    6. Stir in flour til smooth.

    7. Stir in cooking liquid and milk; microwave on Hi 2 ½ -3 minutes, stirring once.

    8. Mix in cheese, wine and scallops.

    9. Season with salt and pepper.

    10. Spoon into 4 1 cup dishes and sprinkle with remaining cheese and crumbs.

    11. Broil 6” from heat 1 ½-2 minutes.
