Lemon/Passionfruit Curd
Bonnie Stern - 'Friday Night Dinners' (pg 129)
Ingredients
- 1 cup granulated sugar
- 3/4 cup lemon juice
- 1 tsp grated lemon peel
- 1/4 cup butter
- 6 egg yolks
- 2 whole eggs
- 1/2 cup passionfruit puree and 1/4 cup lemon juice (instead of 3/4 cup lemon juice)
- Omit grated lemon peel
Directions
In a saucepan, combine sugar, lemon juice, lemon peel and butter. Bring to a boil.
- In a bowl beat all eggs. Beat sugar mixture into eggs and then return to saucepan. Continue to cook over medium heat for 2-3 minutes, or until mixture comes to a boil and thickens slightly. Strain into a bowl and chill.
