Lemon/Passionfruit Curd

Serves 1 1/2 cups

Ingredients

  • 1 cup granulated sugar
  • 3/4 cup lemon juice
  • 1 tsp grated lemon peel
  • 1/4 cup butter
  • 6 egg yolks
  • 2 whole eggs
  • 1/2 cup passionfruit puree and 1/4 cup lemon juice (instead of 3/4 cup lemon juice)
  • Omit grated lemon peel

Directions

  1. In a saucepan, combine sugar, lemon juice, lemon peel and butter. Bring to a boil.

    1. In a bowl beat all eggs. Beat sugar mixture into eggs and then return to saucepan. Continue to cook over medium heat for 2-3 minutes, or until mixture comes to a boil and thickens slightly. Strain into a bowl and chill.
