Gwen's Almond Biscotti

Ingredients

  • 3 eggs
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 1 tsp vanilla paste or pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 2 tsp baking powder
  • 2 cups Special K cereal
  • 1 1/2 cups coarsely chopped almonds

Directions

  1. In a large bowl, beat eggs and sugar until light. Beat in oil and vanilla.

    1. In separate bowl, combine flour, salt and baking powder. Stir flour mixture into eggs. Stir in cereal and almonds. Mixture will be sticky. Refrigerate for a few hours or freeze for 30 minutes.

    2. Shape mixture into eight logs about 6 inches long and 2 inches wide. Arrange about 2 inches apart on double stacked baking sheets lined with parchment paper.

    3. Bake in preheated 350 oven for 20-25 minutes or until puffed and golden. Remove from oven and reduce oven temperature to 325. Cool biscotti for 10 minutes. With a serrated knife, cut logs into slices 3/4 inch thick and arrange standing up or flat on baking sheets. Return to oven and bake for 15-20 minutes, or until lightly browned (turn after 10 minutes if you are baking them flat).
