Ginger Crackle Cookies

Ingredients

  • 2/3 cup vegetable oil
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups all-purpose flour or whole wheat flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp kosher salt
  • 1/2 cup coarse sugar

Directions

  1. With an electric mixer or in a food processor, combine oil and granulated sugar. Beat in egg and molasses.

    1. In a separate bowl combine flour, ginger, cinnamon, baking powder, baking soda and salt. Stir into egg mixture. Refrigerate dough for one hour.

    2. Shape dough into balls (1 tbsp/15 ml each). Roll in coarse sugar, place on parchment lined baking sheets with lots of room between cookies. Press down lightly.

    3. Bake in preheated 350 oven for 9-11 minutes, or until cookies are crackly but still chewy. Cool on racks.
