Ginger Crackle Cookies

Ingredients
- 2/3 cup vegetable oil
- 1 cup granulated sugar
- 1 egg
- 1/4 cup molasses
- 2 cups all-purpose flour or whole wheat flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp kosher salt
- 1/2 cup coarse sugar
Directions
With an electric mixer or in a food processor, combine oil and granulated sugar. Beat in egg and molasses.
In a separate bowl combine flour, ginger, cinnamon, baking powder, baking soda and salt. Stir into egg mixture. Refrigerate dough for one hour.
Shape dough into balls (1 tbsp/15 ml each). Roll in coarse sugar, place on parchment lined baking sheets with lots of room between cookies. Press down lightly.
Bake in preheated 350 oven for 9-11 minutes, or until cookies are crackly but still chewy. Cool on racks.
