Creamy Chicken & Apples

Ingredients

  • 1 tbsp. veg oil
  • 4 chicken breasts, flattened to ½” thick
  • 1 medium onion, sliced
  • ½ c. chicken broth
  • ¼ c. white wine or apple juice or water
  • ¼ tsp. thyme
  • ¼ tsp. salt
  • 4 medium apples, cored & cut in 1/8” slices
  • 1 tbsp. flour
  • ¾ c. light cream

Directions

  1. Sauté chicken in oil with onion until golden on both sides.

    1. Reduce heat; add chicken broth, thyme and salt.

    2. Cover; simmer for 10 minutes. Remove chicken from pan.

    3. Add apples to pan; cover and simmer 3-5 minutes, stirring occasionally.

    4. Dissolve flour in cream, stir into pan, cook and stir until slightly thickened.

    5. Spoon sauce over chicken.
