Coconut Crisps

Ingredients

  • ½ c. shortening
  • ½ c. brown sugar
  • 1 egg
  • ¾ rolled oats
  • ½ c. coconut
  • 7/8 c. pastry flour
  • 1 tsp. baking powder
  • 1/8 tsp. baking soda

Directions

  1. Cream shortening.

    1. Add sugar and egg. Beat til fluffy.

    2. Add oats and coconut.

    3. Add dry ingredients.

    4. Chill.

    5. Drop by teaspoon and press gently with a fork.

Bake @325° for 12-15 minutes
